Idea for more centaur variety: All centaurs get the Nature Affinity Trait a variant of the equine build trait that hinders climbing and lets them carry a medium or smaller creature that isn't too heavy for them to carry (i.e. luxodon, minotaurs, etc). All centaurs get a +2 in Constitution. All centaur variants have a walking speed of 35.
Field Centaur: They are the usual centaurs as we know them. They resemble horses and have a speed of 40. They have a more powerful equine build towards carrying, pushing, and dragging and get a +1 in Strength. They can carry even heavier medium creature, except other centaurs, and they can make unarmed strikes with their hooves.
Mountain Centaur: Their lower half resembles mountain goats and they have long curved horns they can use for unarmed strikes. They have a climbing speed equal to their walking speed. They are also resistant to cold damage, can traverse mountainous terrain unimpeded, and get a +1 in Dexterity.
Forest Centaurs: Their lower half resembles deer. They can speak with plants, beasts, and animals, and are adept at traversing difficult terrain in forests, plains, grasslands, and marshes unimpeded. They have antlers to make unarmed strikes with. They get a second skill from the Nature Affinity trait and a +1 in Wisdom.
Sky Centaurs: Their lower half resembles pegasi, and the can... well... fly. That's it. They get a +1 in Charisma.
Desert Centaurs: Their lower half resembles camels. They can traverse difficult terrain in deserts, savannahs and plains unimpeded. They are taller than the other centaurs, which gives them a clear field of vision in thick crowds or thick underbrush, etc. They can go for a number of days equal to double their constitution modifier without the need of food, water or sleep.
Astral Centaur: Probably the weirdest looking centaurs, with blue skin and somewhat insectoid features. They have long fleshy tails with bladed tips to make unarmed strikes with and possibly parry attacks. They have advanced telepathic and teleportation abilities, and they get a plus 1 to one ability score.
Centaurs are already anatomically awkward enough and now you want a variant with wings? That's 8 limbs. It's a spider.
But in seriousness, the pegasus and (thri-kreen?) versions feel like too much. The others are all hybrids of natural creatures, but a centaur that's also a weird bug thing feels more like a variant of a weird bug thing than a variant of a centaur. And the pegasus flight completely negates the climbing penalty. I would stick to beasts - the variant features shouldn't completely overshadow - or directly contradict, in the case of Nature Affinity - the base race.
