So basically my main troubles at the moment are setting up a couple different effects on items. One item, we'll call Spirit, I want to add extra attacks per action to it. I've tried using the bonus - extra attacks to no avail. (I know I could just write it in, however I'm wondering if there's anyway to get it to show up on the character sheet where the A/PA is.)
Second issue is for a second item, called Tremor, was that I'm wondering if there's anyway to get an unarmoured defence that would ignore Dex but would work for Con+Wis. Tried a couple routes an got no where so thought I'd come here to see if anyone could help on this.

If you add extra attacks to an item (like a sword) then they only apply to that item. And if the Wielder already has that many attacks they get nothing extra. The extra attacks are not added, they are “set.”

You can, just not with a magic item. It would require a feat, and it won’t just add more, it sets a firm number (up to a max of 4 I think) so it can get screwy if you don’t know how many Attacks/action the intended character has/will have.

It’s an issue with:
How magic items work.
How Extra Attack works.
Magic Items are supposed to be self contained, so by putting Extra Attacks on an item, like a Magic Weapon, you are setting that specific item to have them. By putting it on a feat, you setting the Character to have the Extra Attacks.
The way Extra Attacks works, they are never “+1 Attack” because they are intentionally designed that Extra Attacks from different sources don’t stack. A character only ever gets the highest. That’s why at 5th level the feature always specifies “2 Attacks per Action.”
So, if you add Extra Attacks to a Feat, and Set it at “1 Extra Attack,” then it will accept that as 2 Attacks/Action, if you set it at “2 Extra Attacks,” then it will accept that as 3 Attacks/Action.

And for extra attacks, I don't think so, as the only thing that gets more than 2 is the base fighter class.

For the extra attacks, if you are looking at a bonus action attack, you could look at Scimitar of Speed or maybe copy it as a base.
