Peter wrinkles his nose in thought as the imp speaks. As it finishes speaking he replies, "Allow me some time to think." He does a little mold earth to create a makeshift seat to sit upon as he ponders.
In his head he thinks: 500 platinum? That's more than I think I've ever seen. With that kind of money we'd never want ever again. Not my wife, Graalia not Dad, not even the avunculi or cousins. The whole extended Gathakanathi family would be living easy. We could even resurrect Grandpa! Yeah... Grandpa, a cleric of life. For that matter Dad too. What would they say if they found out I was consorting with a fiend? I don't think I'd be able to look them in the eyes. For that matter I'm pretty sure my wife wouldn't be too pleased either. What was it Dad found in that castle? Potions of fire resistance. Well, looking at this place that makes sense. But also potions of cold resistance and water breathing. Cold resistance? That doesn't seem to fit this place... or any these lower planes cold? (Arcana: 13+1 = 14, think it's reasonable to treat that as knowing basic knowledge) I guess there are. But then why did that iron-masked fiend attack me? Under the thrall of the wizard: should've been attacked by this... Graz'zt that wants the portals gone. Under the thrall of Graz'zt: probably a test of sorts but why has he not destroyed the portals himself?
He turns to the imp and stands up. "I have questions." he says, "Was that iron-mask under your master's command? Why does he want the portals destroyed? And why has he not destroyed them himself?"

He thinks: A wizard? What else did Dad mention? A wizard of at least 17th level. Naydal. Trying to conquer the world with portals and in his notes was an description of... Shebaz the size of a tarrasque. And... mushrooms.

Tbh, I felt I was cheating a bit by using a spell scroll but I went through several long fights and just settled for the quick one, thanks to vulnerability. I guess, I will be using this trick more often if an opportunity presents itself again.

I'm thinking 2700 XP and 8500 gp. I'll expand the Magic Shop more. Here is a sampling of the monsters. I'm just doing singles on this tier. I am loving the combos and tactics so far and I hope my DM rulings are fair.
The reduced threat Wyvern (1D) is only CR4 for me for 1100 XP. Perhaps you meant to reference another monster? I think you wanted to link to the normal Wyvern.

Atherna, with a silvered rapier at her side, an owl on her shoulder, and a magical stone orbiting her head, reads a scroll of mage armor, drinks a potion of heroism, and casts protection from evil and good on herself. She then jumps into the portal before her, ready for anything that could come (specifically a merregon) with her initiative of 15 (12 + 3).
The Merregon (45/45) rolls initiative 21

Reacting quickly to the fiend's advance, Atherna begins to move around the merregon with grace and precision. With a word, a strike of psychic energy lashes toward it, and the bugbear tries to take the distraction it gives to escape. Slower to act, the owl on Atherna's shoulder takes flight, making sure to distract the devil as it flies above the reach of its halberd.

(It doesn't make a difference in this case, but the merregon should have disadvantage on attacks against Atherna for as long as she concentrates on protection from evil and good. Also, shouldn't it be at 39 HP, since it only took half of the 12 psychic damage?)
Atherna swiftly moves out of the way of both attacks, unscathed from the merregon's attempts at wounding her. Once again, she tries to make an opportunity to get some distance, saying a word and lashing out at the mind of her enemy.

Back in melee, Atherna takes out her silvered rapier and slashes it towards her foe, thunderous energy rippling through the blade. Her owl flies after the somewhat stunned devil, trying once again to distract it from the real threat.

As two more of the fiend's blows miss her, repelled by some magical presence, Atherna takes the opportunity to land a devastating counterattack that ripples with sonic power. To egg on her foe, she almost dances away, the vibrating energy around it threatening retribution should it move after her.

After taking 13 damage, The Merregon (11/45), with its 6 Intelligence, takes an Attack of Opportunity and then double moves to engage in melee, due to Bladesinger +10 extra feet, taking an additional 5 ;) damage, The Merregon (6/45) gets just one attack, and at disadvantage.
(FYI, errata was found in my magic shop for Ioun Stones. Originally I said all stones were 3k but I found a few that were more. I have updated the 1st post and removed Stone of Mastery, it was my mistake. No harm in past use, just swap it out going forward.)

Atherna, with a silvered rapier at her side, an owl on her shoulder, and a magical stone orbiting her head, reads a scroll of mage armor, drinks a potion of heroism, and casts protection from evil and good on herself. She then jumps into the portal before her, ready for anything that could come (specifically a merregon) with her initiative of 15 (12 + 3).

Reacting quickly to the fiend's advance, Atherna begins to move around the merregon with grace and precision. With a word, a strike of psychic energy lashes toward it, and the bugbear tries to take the distraction it gives to escape. Slower to act, the owl on Atherna's shoulder takes flight, making sure to distract the devil as it flies above the reach of its halberd.

(It doesn't make a difference in this case, but the merregon should have disadvantage on attacks against Atherna for as long as she concentrates on protection from evil and good. Also, shouldn't it be at 39 HP, since it only took half of the 12 psychic damage?)
Atherna swiftly moves out of the way of both attacks, unscathed from the merregon's attempts at wounding her. Once again, she tries to make an opportunity to get some distance, saying a word and lashing out at the mind of her enemy.

(FYI, errata was found in my magic shop for Ioun Stones. Originally I said all stones were 3k but I found a few that were more. I have updated the 1st post and removed Stone of Mastery, it was my mistake. No harm in past use, just swap it out going forward.)

Would I have to drop one from the list or would it still be there, just with decreased spell attack/dc?

Wyvern Pros: The game is Dungeons and Dragons and it's a freaking wyvern! Cons: Very fast fly speed, make it hard to maneuver, may result in a melee outlast where it has the bigger HP. Workaround: Entangle and Earthbind have potential to negate the fly speed. But it also has reasonably good STR saving throws so may well get negated. (But you do have 3 lv2 slots for Earthbind.) Get a poison-resistance potion to help with that stinger.
Gauth Pros: Get to fight a beholder-like monster. Slow speed for maneuvering. Cons: Eye rays. Devour Magic ray has potential to negate ioun stone or wand of war mage. Paralyzing and Sleep rays can get it in melee range easy. Fire and Enervation rays can do a lot of damage. Workaround: Get scrolls of Blindness to negate eye rays. Potions of resistance for necrotic and fire. Buy some vicious weapons to decrease odds of getting important magic item drained. Rely on bonus-action starry archer + action produce flame to make up for action economy.
Hellwasp Pros: Rime found an awesome way to win this fight. Cons: Want to find something else.
Zakya Rakshasa Pros: Wears metal armor without fire immunity/resistance. Would be able to use Heat Metal. (never actually gotten to use this spell before) Cons: Immune to 1st level spells. Very formidable melee. Workarounds: Not being able to damage it with 1st level spells frees those slots up for self-buffs. Has same walk speed, can maneuver. Have reasonable odds of winning initiative.
Dybbuk Pros: Only has one attack. Cons: Can reduce max hit points. At will dimension door can negate maneuvering. Lots of magic resistances to effects. Workarounds: Not resistant to radiant damage. Relatively low hit points compared to other options.
Sivak Dragonian Pros: No ranged attacks. No resistances. Cons: Can knock prone. Faster fly speed. Workarounds: Earthbind or Entangle.
Right now leaning towards the Zakya Rakshasa with either the Gauth or Wyvern contending as a second option.

Pros: Rime found an awesome way to win this fight.
Cons: Want to find something else.
Zakya Rakshasa
Pros: Wears metal armor without fire immunity/resistance. Would be able to use Heat Metal. (never actually gotten to use this spell before)
Cons: Immune to 1st level spells. Very formidable melee.
Workarounds: Not being able to damage it with 1st level spells frees those slots up for self-buffs. Has same walk speed, can maneuver. Have reasonable odds of winning initiative.
Dybbuk
Pros: Only has one attack.
Cons: Can reduce max hit points. At will dimension door can negate maneuvering. Lots of magic resistances to effects.
Workarounds: Not resistant to radiant damage. Relatively low hit points compared to other options.
Sivak Dragonian
Pros: No ranged attacks. No resistances.
Cons: Can knock prone. Faster fly speed.
Workarounds: Earthbind or Entangle.
Right now leaning towards the Zakya Rakshasa with either the Gauth or Wyvern contending as a second option.
