From the character sheet, open the Edit menu, and select "Manage levels". This should take you to a screen showing your current Class, and all it's details. This is where you would add a level to your current class. Scroll to the bottom. Below all the benefits detailed to your current class, there should be the text-button that DukeForau describes. Here you would add whatever other class you are seeking to add.
One reason it might not be there is if you don't meet the requirements. You must have a 13 in the relevant stat(s) of the both your current class(s) as well as the class you are trying to multiclass into.

It would still have the “add another class” button, it would just show them they have no viable options.
Why does it have two seperate character levels that they add together?
It's the way multi-classing works.
To summarize it: You have class levels and a total character level. Each class has its own level and all those added together is your character's total level. So a character with 3 levels in wizard and 2 levels in bard is a level 5 character.
If your character's level was the only level present and applied to every class you take, then every character would just take every class. Level 5 character? Now you're level 5 in every class. That's just too broken and unrealistic. A character would have different amounts of training and experience in each class, so each class has a different level.

That doesn't turn multiclassing off - it turns the requirements for multiclassing off.
