You know, besides Eldritch Knight, Rune Knight, Arcane Archer and Psychic Warrrior.
But yes, I agree, an Intelligence fighter without supernatural abilities would be great. Probably the Warlord, or Revised Gunslinger. (I never understood why Gunslinger used Wisdom, not Intelligence.)

Well, we have Fighter, Rogue, and Wizard subclasses left to receive a new UA soon. Last time it was these three together, it was psionics for all of them. They could either redo these subclasses with fixes (unlikely), or make some other new subclasses.
I really want another Fighter subclass that isn't magical. So far we only have Champion, Battle Master, Cavalier, and Samarai, and Battle Master is the best of these. I want the Brute, but that is unlikely. Maybe do a nature based one, like a Woods Master, or something.
Rogue could be anything, from Bounty Hunter to Infernal Stalker. A Shadowfell based rogue could be cool as well.
Wizards could be nearly anything. In Xanathar's they introduced the War Magic Wizard, a mix of Abjuration and Evocation. I would like some other combinations of the magic schools, like a Limbo Mage (conjuration and transmutation) or a Hypnotist (illusion and enchantment), or one with pets, like an Elemental Summoner (conjuration and evocation).
After the subclasses part 4 is published, I think they'll take a break from new subclasses, and either do a second Class Feature Variants (maybe subclasses), or some new races (possibly planescape related).
We already have the Revived rogue and the Way of Shadow monk, I think a Shadowfell rogue might be stepping on their toes a little.
I don't think it would be a problem. Revived rogue is more of the Reincarnation theme, shadow monk is a monk, and I think that the rogue would function differently.

if the monk does not get an psionic subclass i will be seriously annoyed, this is an great time for wizards of the coast to recycle some of the psionic diiplince effects they made for the mystic into something else
also do we know for shure that the next ua will be something psionic?
anyways, as for what an psionic monk could look like i think the high ranking gith from mordekinens tombe of foes are good examples of what it could be
also further itterations of sidekicks and classvariants rules would be nice, i know the essentials kit exists but it is extremely restrictive and i think an better way to level up friendly monsters would be good, more rules for summoning or more summoning spells than what we have already

Way of the Astral Self is the psionic subclass for the Monk.
We have no idea if the next UA will be psionic subclasses, it probably won't be.
I do want more Class/Subclass Feature Variants. Sidekick rules probably won't be updated again.

i disagree on the "astral soul is the psion monk", yes it is an subclass that works of the mind of the monk, but it does not really feel like an psionic subclass, and i feel that an option more representative of that direction, of an psion, beinding the world arround them should exist alongside the astral self
more specifically, perhaps an elemental bast of water that caan restrain targets to go alongside the elemental beasts of air and eath, emulating the giant frog and giant constrictor snake?
perhaps more options for warlocks to make them more versatile for out of combat situations, maybe an feature that can allow an warlock to summon yugoloths, or an spell like "hire yugoloth" working sort of like planar ally, and speaking of planar ally it should defenetly be on the warlock spell list like i get it, warlocks and clerics are verry diffrent and this is letting the patron play a big role in the adventure but i really do think it fits the warlock rather well

Yeah, the designers seem to think that the Astral Self monk fulfills the "psychic monk" theme. I agree that this is a bit disappointing, as it is a good subclass, but doesn't feel exactly "psionic".
Its probably all we're going to get for the psionic monk.
So, most of the recent UA have been themed around similar ideas and mechanics. A lot of them have the "you may use this once a long rest, or recharge it with a spell slot" ability. Wizards don't have this yet, so I'd like to see a Wizard subclass that has an ability like this.
I've also mentioned before how I'd like to see more mixes of magic traditions, like the War Magic Wizard from Xanathar's. What are some mixes for the Wizard that you'd like to see that haven't been mentioned yet?
How much you wanna bet that these are the droids we’re looking for?

There will be a part 4. They've done 10 of the 13 classes, they're going to finish it off.

They already did all 13 classes, they started with fighter, rogue, wizard in November of last year.

If you check the dates for each UA as of late they seem to be dropping roughly 2-3 weeks apart.
It's ok Ranger, you'll always be cool to me.. Unless druid gets another use for its wild shape charges.
I guess we’ll find out the answer in a couple of weeks then.

While I agree that the Astral Self Monk is not what I think of when it comes to psionics, That does seem to be the intent on the designer's end.
