Description
Orcs are burly raiders with prominent lower canines that resemble tusks. They gather in tribes that satisfy their bloodlust by slaying any humanoids that stand against them.
If you want some beefier Orcs and Gnolls, using modified versions of the thug, berserker and knight makes sense.

It's at the top of the sheet 2d8+6 HP. Most people just use the average (15 HP) for simplicity.

Yes, but it’s rare. It’s less that they are all dim, and more that they have such short lifespans that it doesn’t make sense for them to invest time into serious study or education.
So, tribes usually breed half-orcs to be the brains of their operations.
That being said, the chiefs and priests are going to have at least average intelligence.

Actually, I think Orogs are closer to Uruk-Hai than orcs are. However, that may just be my bias from having seen the movies recently and not having read the books in a while.
I say this because the Uruk-Hai were actually, from what I can tell, pretty good strategists and foot soldiers, and this corresponds with the Orogs being smarter than an average orc or even human. Besides, Orog sounds pretty close to Uruk-Hai (without the Hai), in the same way Balor sounds similar to Balrog.

Why do 5E monster profiles give us no examples of how many of each monster are typically encountered or does it even matter anymore?
Because most encounters specify the number engaged and tend to allow changes based on party size and strength.
