It's pretty well known centaurs have a lot of trouble climbing, but would the path of the beast beastial soul remedy this? It gives climbing speed equal to walking speed (same applies with swimming speed). Would this give centaurs normal climbing or is this mostly up to the DM? I'm pretty sure one of the new ranger abilities allows this too but I know for sure its in this subclass

Now your centaur can just run up a wall and onto the ceiling. Upside down ceiling centaur archer tactics anyone?
If I were DM I wouldn't allow this due to its level of absurdity. Yes, spider climb exists, but that is a magic spell. This is a centaur growing claws and climbing up the walls. I wouldn't allow the swim speed either frankly as a horse body is poorly built for water. To be clear I'm not doing this because I think they're too powerful. I think centaurs are an absurd player choice in general that doesn't take into account how ridiculous interacting with the world through a half-horse body would be. But if I had a player hell bent on centaur with a good backstory I would homebrew two replacements that are more fitting for centaur anatomy. One would be mountain goat based, think bonuses dealing with traversing difficult terrain and acrobatics checks. The other would be gazelle based and probably give bonus action dash equal to proficiency modifier per rest (not sure which one). Sure, these changes make it a less versatile feature, but they do a good job of compounding with the centaur's existing strengths and more importantly don't completely break my flavor/logic meters.
I just see it as a creative challenge to describe. You already brought up the perfect RL analogy - mountain goats can do some truly unbelievable things. So it should absolutely be able to work in a fantasy world. The ability doesn't require you to climb with your claws, you describe it however you want. So figure it out. This is half the fun of D&D as far as I'm concerned.

First of all, horses are excellent swimmers. Second of all, the idea of a centaur having the power to climb walls without any equipment is no more unrealistic than a human doing the same thing. If we can accept a human doing so, what's the holdup for centaurs?

As for the climbing, cats, primates, lizards, frogs, spiders and many others have incredible, seemingly impossible to physics climbing abilities. The point is it's much more believable for a humanoid's hands, feet and limbs to adopt these qualities and put them into effect moving their body than the hooves of a centaur adopting them and carrying that bulky horse body up and across walls and ceilings.
But this is DnD, not real life, so whatever. Have fun with it if you can. I absolutely love the spider climb spell and this is close enough to be a super fun ability. I'm all about it, it just rubs my overly logical sensibilities the wrong way when you slap this on a centaur.
Fair point, and a big part of why I have a general loathing of it as a player race. It's just a ridiculous creature. For whatever reason it is disruptive to me. I know there are plenty of other ridiculous creatures in DnD but they, for the most part, don't break the immersion for me.
This ability is going to make for some really fun moments though, and I'm all about that.
This isn't any more absurd than the Centaur itself. The Centaur has been transformed partially into a beast. Flavor it however you like, the horse legs have transformed/mutated into claws. You have essentially transformed from a Centaur to a Urmahlullu
RAW I don't know why it wouldn't work. But a horse standing upside down on the ceiling? I guess that depends on the group. I can see it being really funny to some people, but breaking the experience for others due to the absurdity of it.
Could flavor the Beast Centaur to be somehow descendant of this awesome monstrosity, so this is the more beastial form they take when raging. Then seeing them climb up walls doesn't seem like to far of a stretch. lol
