I like to see the good guys win, so I'm rooting for Bahamut. There are no current stats for him, Tiamat is CR 30, one of the only things in the game we have so far to give us a basic idea. I like to think that he's more powerful himself, she has access to more minions, so in a one to one fight, he'd win, but she's Evil, and she'd never let it come down to that.
Agreeing with the others, Bahamut is the only moral choice to support.
However, I think Bahamut is likely to also be better in a 1 vs 1 dragon battle, whereas Tiamat is better at causing mass destruction. One of those never ending cycles of Tiamat tricking her way onto the Material plane, and Bahamut narrowly sending her back to hell for a millenia.
As long as his breath weapon is a very long line effect, and he can fly at least as fast, then he can strafe around and keep her at bay. Of course, there is no reason to expect a fair fight, and it doesn't take much to tip the scales.

Stripping away most of the divine level content, here are some of the highlights:
Bahamut || Tiamat
HP:1,378 || 906 AC:76 || 69 Speed:300ft Fly (Perfect), 60ft Swim || 150ft Fly (Clumsy), 40ft Swim Breath Weapons:Cone of Cold (80ft), Gaseous Form* (80ft), Disintegration (160ft beam) || Cone (70ft Cold, Acid, Fire), Line (140ft Acid, Lightning) Bahamut has better stats across the board. Both are Divine Rank 10, so all of the godly qualities are basically identical.
It looks like Bahamut is significantly stronger than Tiamat, and when adjusted for 5e, would probably be CR 33~35.
The Gaseous Form breath would straight up stun and turn every affected creature into harmless gas for 3 minutes.
In my game world Bahamut is blinded by his own righteousness, like literally mortal eyes can't function in his court because of all the gleam. Tiamat's consciousness is incoherent amidst the echoes of her furious will within her skulls and her general confinement. Metallic and Chromiatic dragons are an ordering imposed by Tiamant and Bahamut's sundering of draconic essence on a number of planes of existence. There are "greater dragons" not subject to the schism, some of who think it would be best to end both of them to restore dragons rightful place within the engines of creation, but even those who think it would be the best thing to do are reluctant to, because of the dragons tendency to horde wonders and these dragons see their lessers as "treasures" however misguided their polarization may be.
So detente, for now.

I would support Bahamut, but I also like Midnight Plat’s interpretation of the draconic deities. My version of Bahamut always does the right thing, but his reasons may be incomprehensible to all but the oldest of dragons. But let’s see what Fizban’s Treasury of Dragons has to say.

Who am I rooting for? I would rather take an aloof (nearly absentee) deity who means no harm than one who directly demands worship and servitude.

If Bahamut in any way represents justice, you might be in for a surprise if you are backing an irredeemably evil god like Tiamat. You certainly would be in danger from their followers, who might not be so peaceful as their deity...
Also, I don't think Tiamat really cares who she destroys...rooting for her would not grant much protection I would think.
The same logic you present would have you siding with Sauron in LOTR for similar reasons, to use the property you seem to favor. I dont think the men and elves were ever "nice" to orcs and goblins after his defeat, so the logic would fail there too.

I don't suppose there's anything wrong with backing the Evil deity of your choice, but I still have to wonder what's wrong with everyone being nice, and if they expect Tiamat to be nice anyone, even her worshipers. Classic bad guy behavior; execute a trusted and reliable sidekick when someone else gets out of line to show people how powerful you are and inspire them to work harder for you.

i honestly think the emerald dragon would win. he might be able to outsmart them and also psionics rocks! he dosent have as many heads though
