Oh my god yes. I've only watched the Netflix show but the setting is so good. There's something to be said about the (rather cliché) "you are the chosen one" plot, but I love the way magic is connected to the world.

An official D&D: Minecraft edition.
This collaboration has to happen eventually.
Could be neat, assuming they don't go the direction of Dungeons or Story Mode. I've never really liked the way the Minecraft spinoffs add characters and lore. Maybe if there was just some kind of crafting system, and a bunch of stat blocks for monsters. Minecraft's enchantment system might work pretty well in a TTRPG, too.
I've written out a couple of 5e stat blocks for some Minecraft monsters, might post them somewhere.
I think an Avatar setting would be pretty fun, too (the one with the bald kid, not the tall blue people). The ATLA TTRPG looks fun, but the system seems a little too fluid to me.

Fullmetal Alchemist.
It has a fun mix of technology and magic (alchemy) to fit a wide array of character types, while still feeling fairly grounded and relatable to the real world. It some really flavorful worldbuilding to work off of while still leaving alot of material left unexplored. I definitely feel like alchemy as a power system would need a more flexible system than something like 5e since it is very resource dependent but also very open ended to what can be done with said resources depending on your character's (or player's) knowledge.

I keep wanting to say take all of Burroughs' work, but then I remember Blackmoor existed. But combining Pellucidar, mars, Venus, and Africa all in one bunch is a potent potential for a wild ride -- and a third of the work is already done, lol.
Flux and Anchor series by Jack Chalker. This would really work well within the schema, in part because a lot of it is already there: Cities surrounded by a magical mist, cut off from each other with the mists haunted by horrible creatures that used to be people.
I admit I can keep going here, lol. As my homebrews keep reminding people I play with, Fantasy is an inclusive genre; I have taken episodes from comedies, dramas, actioners, westerns, heists, spy stories, horror films, hard boiled noir, and more. I have had the party become a stand in for Mickey Spillane and had them stand at the gates of R'yleh. They have shot at the crow whilst tearing down the wall in search of a cask of amontillado. They have been themselves transported and they have faced down pennywise.
They have screamed for Goose after the dragon crashed. Annoying bird, but plays a mean piano. They have had to fight the nefarious secret organization with the dormant volcano for a base bent on taking over the world, said goodbye in the rain because after all, this is the beginning of a beautiful friendship and the needs of five people don't amount to a hill of beans in this world. They have had to survive the crash of the transport plane and managed to figure out how to stop the criminals they had been lumped in with from doing something terrible.They have tried in a court and had to tolerate the actual gameplay as flashbacks of what they did whilst working for a mob boss, culminating in standing uon a massive tank and screaming top of the world , ma just before it exploded.
This is why I say that, lol. What do I really want to see? I admit, all of it, lol. It would take a lot of work, but I bet I could make a series of campaigns featuring multiple characters by taking OS:ST, TNG, DS9, et al and just running those episodes and films in a way that allows for the experience -- though I confess I would have to shift some stuff around so that the order makes a bit more sense, lol.
I only require that at least once each big campaign I am allowed to have a dungeon crawl, lol.

Fire Emblem! There are so many fun mechanics introduced over the years, and having that in a TTRPG format will be cool. While the games' plots are kind of generic throughout the series, the characters are generally pretty interesting and great. Edelgard is probably my favorite Fire Emblem character right now, and one of my favorite fictional characters of all time.
It is not fantasy, but having an Advance Wars TTRPG would be cool too. It would be pretty wild to bulldoze the enemy with your megatanks.
I'd actually like to see more Forgotten Realms. They've focused almost entirely on the Sword Coast (with some material dedicated to Chult). There's an entire continent (world, actually!) that's not had official content and material published in a long, long time.
Barring that, I'd love for an in-depth, atmospheric overhaul of Sigil. TONS of adventuring and RP possibilities there.

Greyhawk. I don't know much about the setting, but I've always been a fan of sword-and-sorcery settings. I love Forgotten Realms but sometimes it's nice to see a setting that is less "we are the heroes because it's the right thing to do" and more "we are together because it's mutually beneficial".

I would love to see Magic’a Kamigawa utilised in D&D - specifically, I would love to see Wizards use D&D to further explore the transformation from the old Kamigawa set (classical Japan in style) to the new one (modern Japan). In the real world, Japan’s transformation from its traditional origins to its more modern ones involved a fair bit of political and military conflict that could make great inspiration for a set. Not to mention it would provide three great new playable races - Kitsune, Moonfolk (cloud-dwelling humanoids), and Nezumi (ratfolk). There’s also plenty of neat Magic cards for them to make into fun items, plenty of spells, and a set of great creatures to make monsters from. Plus, I love the idea of Wizards taking a setting that was so different between iterations, and allowing players to step into the little-known between period and feel like they’re part of a major transformational event.
Magic’s Kaladesh would make for a pretty neat setting. It is aesthetically fairly unique, has roots in non-European style, could add some fun magical items, provides a place to make a new Artificer subclass, and Aetherborn could be an interesting playable race.
Well, all I wanted was Eberron, Spelljammer and Planescape. In the olden days I was partial to the Realms, so maybe I'd like a Cormyr and Dalelands expansion, but that's it.

But actually, I’d love to see pretty much any non-European setting. They’ve got Kara-tur and maztica on toril, and I bet they could pull it off without being racist if they, you know, tried. Or expand one of the adventures from radiant citadel into a more full setting if they want to stay away from FR. Just pick a different continent, get people who actually understand the cultures, and have at it.

There is The Elder Scrolls Call to Arms. It is a miniatures skirmish war game, so you will probably need to homebrew some out-of-combat rules though.
