Is it possible to create and add custom spells for the Barbarian class? It appears to be limited to the standard spell-casters: wizards, clerics, bards, druids, etc

The barbarian isn't a Spellcaster class, so you'd need to create a homebrew version of the subclass, to add the spells to it and define how frequently they can be used.
It's really unfortunate that you have to actually own the spells to use as a template.
While I understand this from a business point of view, it's not great for players: I guess it's common that only those who often DM actually own (and share) the content - so when you have a DM that likes to use custom items, but doesn't bother with creating them as homebrew items, it'd be nice to be able to just create them yourself. But right now that requires buying the content first, while for everything else shared content is as good as owned content...
To prevent abuse (copying everything as homebrew w/o changes just to 'own' it), this could be limited to a certain number of spells per campaign/character, or alternatively any spell created from a template could be restricted to campaigns where the original spell is available..
Is there a way to have the new homebrew spell replace the standard spell in a campaign? For example, if I had a campaign rule that fire damage was only used by evil pyromaniacs invading from the Elemental Planes, so I want my players to use Iceball instead of Fireball...
Could there eventually be a way to organize homebrew into categories? I have ADHD and its very over whelming to not have things organized the way my stupid brain likes it.
I have decided to modify magic missile at my player's request. The darts, instead of being summoned in the midst of combat, can be summoned before hand, and will hover around the player and act on their own, hitting whatever enemy is closest to the caster. I would simply put this in notes, right?

99.44% of the time, you shouldn't publish. Everyone in your campaigns can see it anyway, and as you noticed, it becomes unchangeable because DDB has a really strange & unique view on other people having rights to your homebrew (even years before it was owned by WotC or the OGL shenanigans).
As to "doesn't affect undead", that is flavor text since the spell doesn't know who you are thinking about targeting. Just type it in somewhere in the descriptions.
Make sure that the homebrew is also in your Homebrew Collection, not just Homebrew Creations.
This is way, way too complicated. Isn't there a way I can just click "Add custom spell" and click the spell I want to a campaign I'm in? I want to add Thaumaturgy to my Warlock but there's no option to do that.

There's no official rule for adding some random spell outside of normal progression, racial, class/subclass features, items, or feats, so dndbeyond was not able to build into their coding for adding stuff in outside of the rules.
Quickest way to do this is add the Magic Initiate (Cleric) feat and just pick thaumaturgy as one of the cantrips and leave the other cantrip and the level 1 spell blank.
