(the last point is theorized, but it it canonically theorized by characters in the forgotten realms, so it counts). Despite this, she is almost never mentioned in games. Am I missing something, or are people just not noticing?

She never cursed the kenku (At least not in modern lore), I don't recall here ruling any race other then the shadar-kai (Which live in the shadowfell), the Shadar-Kai are elves in this edition (and the shadar-kai pantheon is just raven queen+correlon) so I have no idea what your talking about.
Yeah, if anything I could see Kenku culting for the Raven Queen hoping for a different path to redemption, delivered to them in MMM.
Everything else though, yeah the Raven Queen seems be invoked in more specific things in at least 5e than other powers than others, maybe (I'm thinking if you put all Tieflings under Asmodeus who has like 1/2 let's say of the Fiend Pact Warlocks....).
But have you seen the opening credits of Critical Role: Why Yes We'll Take Your Money Jeff Bezos? That raven gets around quite a bit too, with its golden thread tying all the characters together. I put that raven learned it from the Raven Queen.

The Raven Queen is all dark and edgy and crap, so the players who want to make super cool badass edgelords that ooze cool shadowy death vibes are all about her. Also she was featured prominently in campaign one of Critical Role and the edgelord fanboys/fangirls are generally not very original or creative so they want to be like Vax now as well as Drizzt, which fits right with the shadar-kai and Raven Queen. Every time someone talks about their dark and edgy super awesome badass shadowy and tragically mysterious character they will also tell you about their personal interactions with and importance to the Raven Queen to validate their dark edginess. That's why you think she's "everywhere." If you want less Raven Queen, stop hanging out with the edgelord kids.
You have to remember that the Raven Queen is a deity that is more or less neutral. She’s going to have followers and priests all over the multiverse watching over everything because she wants control over her qualities.

The Raven Queen is more than a bit psychotic. She hates undead yet supports warlocks who have explicit abilities in the summoning and creating of undead. My hexblade warlocks pick patrons that are more mentally stable.
Note I said "more" mentally stable, not "completely" mentally stable.

What underground race does she have control over? I believe the Kenku connection comes from their curse. They wronged their patron deity and were cursed by them. (I myself favor the Raven Queen as the patron but it doesn't say her clearly.) I think that she is popular because she is mysterious and adaptable to different stories.
I can't help but picture the Raven Queens abode in the Shadowfell to be like the Tower of London; ravens all over the place, soldiers trooping around the place with lots of pomp and ceremony and a legend that stats something along the lines of "the souls of mortals stay safe whilst ravens dwell within".

This is the version of her I actually worship. I like the idea of a being who will do everything in her power to alter what she can. For example, a person will die today, but she can extend the death a few hours so that the time is later and the family has a chance to say goodbye.

I do too. More benevolent. Which is why my wood elf rogue swashbuckler/ancients paladin/hexblade worships that version of her.
Yeah, triple multiclass. Never been a fan of level cap abilities of any class and the combo truly rocks at character level 9 as a solo traveling Forest Warden.
