And here's how you can guarantee the summon.

This would allow you to not have to pay the gold cost for greater restoration. Furthermore the rules do not state that you cannot have multiples of the same blessings, so stock up on them during down time.

You don't get to choose an area, you just get to choose a range - they "appear in unoccupied spaces that you can see within range".
Fine. Get a box of appropriate size. Cast the light cantrip in the box. Poke a hole on the side of the box. Then pur your eye to the hole and cast the spell.

The DM could rule that 8 mephits appear squeezed into the cube. While a small creatre controls a 5ft space at least two medium creatures are able to occupy the same space (though not willing end their turn in the same space). RAW if a medium creature tries to get away from an enemy with sentinal by passing through the space of an allay both occupy the same space and there ias nothing in the rules ot stop a third passing through the same space as well (though it is difficult terrain). The rule of common sense says there is a maximum number of creatures that can occupy the same space but RAW there is not. Having 8 small creaures in a 5ft cube is not infeasible.
The DM could decide 8 tiny elementals appear in the cube that do not appear in the monster manual (or any other source) for example they could have tyou summon 8 "minor mephits" a tiny mephit with less HP and weaker attacks than the standard. This is fuly RAW. "Despite the versatile collection of monsters in the Monster Manual, you might be at a loss when it comes to finding the perfect creature for part of an adventure. Feel free to tweak an existing creature to make it into something more useful for you, "
The DM determine that what you tried to achieve with your spell is impossible as in the world he created there ar eno elelmentals small enough to have 8 in a 5ft cube. In such a circumstance he could have the elementals overspill into areas you can not see, have less elelmentals be summoned or have the spell fizzle.

If you have a character concept of a player that gets more powerful through the day but it resets if they spend too long resting discuss this concept with the DM and how it could work out don't atagonise the DM by trying to force them to do what you want in game.
The best race to do this with are elves. You do your long rest in 4 hours, and the next 4 you can do the short rest dirty tactic.
The Warforge, or Aspect of the moon Eldritch invocations, allow you to not sleep. But they don't allow you to skip the long rest. That is, you do not do your long rest while sleeping, but in another way. But you have to do it and you can't replace it with short rests without facing consequences.
That said, the DM has plenty of tools to ban this dirty tactic on his table. I would talk to him before doing this.
As for the actual topic at hand, I believe post #17 summed up all my thoughts on this topic, it provides several counterarguments for how the spell could backfire, as well as provides practical ideas.

While I'm sure many of us are sick of hearing "talk to your DM" as the solution for everything, this is the tips and tactics forums where strategies discussed here are typically expected to be usable in actual games, unlike the Rules & Mechanics board where that may not necessary be true. In such actual games, talking to the DM is the best tip/tactic regarding any shenanigans as they have the final say.
However, I will admit this is a creative approach which is always respectable and could be valid from a RAW perspective depending your interoperation on how things are summoned into the world. (No existing rule I could find state what happens if a creature is summoned in a unoccupiable space, nor if a creature could be summoned into a squeezing position)

My response to this would be, "You get mephits, but only one can fit in the area, so you get one mephit."
Then that goes against what the spell does. That's like the gm saying the enemy is not effected by the darkness spell because it's behind full cover.
