You are correct except for this part. Extra Attacks only works on your turn. When you ready an attack, you make a single attack regardless of what you can do with the Attack action on your turn.
What happens when you, the PC, are the (presumably independent) mount.
Three examples being
wild shaped druid carrying anybody a size smaller than the wild shape
medium humanoid with a small humanoid on their shoulders
familiar sitting on a Wizard's shoulder/ arm
The first, for instance, allows a rogue on a druid's back to use Steady Aim every round (DM willing) and in melee always have an ally within 5ft.
The last really simplifies a Wizard using the familiar's senses instead of their own (out of combat since that uses an action). Until a fight breaks out a Wizard with an owl familiar on his arm has 120ft darkvision always, pretty much, from their own point of view, BUT, does the owl use half its move to fly off (dismount).

Well, if the Wizard is a controlled mount... no spell casting as an Action? So... Intelligent mount, not controlled applies... I mean unless he's *ehm* familiar whipped?
I'm curious what more experienced players have done to make having a Mount worth while other than carry stuff. Both in combat and out of combat. Basic mounts? Awakened mounts? Skies the limit as long as it remains close to RAW. Creativity encouraged.
On my Swords Bard/Swashbuckler I have had my mount take it's turn to do a full Dash and then had my character use Steady Aim to completely destroy a bugbear in the same turn. Since it was the mount's turn when it moved it did not disqualify me from using Steady Aim since I had technically not moved on my turn.

i believe there has been clarification on mounted combat from WOTC and DND beyond. when they release the drake warden and gave additional specific rules. and the same rules for ranger companions and summoned mounts.
controlling your mount requires a bonus action.
requires a bonus action to verbally command it to take the Attack, Dash, Disengage, or Help action.
"It can move and use its reaction on its own, but the only action it takes on its turn is the Dodge action, unless you take a bonus action on your turn to command it to take another action." commanding your mount to dash is not a free action.
Commanding your mount to dash is a bonus action, steady aim is also a bonus action. and thus can not be done at the same time... however, a regular move action from your mount is a free action, and would still allow for you to accomplish this.

The bard casts lightning bolt and holds it with a larget of "When targets are in range." Later on, the find greater steed (griffon) flies a massive distance and lands next to the lined-up bad guys, the lightning bolt is released, then the griffon flies a bit away (it didn't have much movement left).
All this discussion about controlling a mount but this thread is meant to be about things you can do when on a mount. Anyways the ready action could probably solve some of these. Once I was riding on a flying mount and we were going over an enemy force but instead of landing I said "How many archers are there?" My cleric blasted them with spells then I hovered over the rest of their force and cantrips defeated the rest of them. We skipped the cantrips on the main attack force part though because that would've taken forever.

i think you are missing out on an easy RAW fix for this discussion...
i mount my steed, our turns are now the same initiative wise. my turn and his turn happen simultaneously.
at the start of my turn, i declare im preparing an attack action for when my mount moves adjacent to a chosen target. and am now holding my action.

my mount then disengages attempting to move away with any movement speed they have remaining. or some mount with ride or fly by attack, ect...
no breaking of turns, interrupting movement, with out having to rely on RAI or the good graces of a gm interpreting how to make mounted combat work.
