I'm preparing a character for a homebrew Domains of Dread game and I'm looking for THEMATIC multiclass ideas. As someone who DM's most of the time, I don't get create many PCs so I enjoy multiclassing to see what kind of unique combinations are out there. Also, I tend to optimize most of the characters so I make so I am interested in trying something new. Again, this is purely THEME-based so I'm not really looking for what combos with what (though I enjoy reading those too).
Right now, I'm leaning towards a reborn lineage and doing a phantom rogue and echo knight fighter to create shades/echos/SPIRITS in combat, whispers of the dead (rogue) and knowledge of past life (reborn) for skill checks/social interactions.
I am a MASSIVE fan of the multiclass between a Warlock (of any type) and the Bloodhunter Profane Soul (Of a different type). Something about the Thematic Fight between two entities that are impowering you and that you owe things too creating a duality within you is really interesting. Like if you choose Celestial Warlock and Fiend Profane Soul you'd literally have an angel and a demon on your shoulder.
I am a MASSIVE fan of the multiclass between a Warlock (of any type) and the Bloodhunter Profane Soul (Of a different type). Something about the Thematic Fight between two entities that are impowering you and that you owe things too creating a duality within you is really interesting. Like if you choose Celestial Warlock and Fiend Profane Soul you'd literally have an angle and a demon on your shoulder.
This sounds like a recipe for a total sociopath and I love it! Hahaha
Jumping onto the warlock train, I’ve always been partial to a Warlock/Cleric combo. It’s a bit finicky with the different casting modifiers but I love the idea of you being a faithful champion of a deity that is further empowered by one of their servants.
So for example you could be a Trickery, War, or Order Domain Cleric of Tiamat who is also a Fiend Warlock in a pact with a powerful Red Abishai or fiendish Red Dragon.
Or you could be a Nature Domain Cleric if Mielikki who is also a Celestial Warlcok in a pact with Unicorn.
Or you could be a Tempest Domain Cleric of Melora Who is also a Fathomless Warlock in a pact with a great Sea Serpent or Kraken.
I have a pretty fun Dragon Knight that took 2 levels of Paladin and then 9 of Drakewarden Ranger. Pike, Heavy armor, mostly used spells for smiting, and a badass dragon companion that I can ride through the air one day.
Another I've mentioned here before is a 6 Phantom Rogue/5 Totem Barbarian/1 Grave Cleric shamanistic warrior who talks to spirits and does spooky shaman stuff.
I should mention that these started out as "I want a ranger who can smite" and "I want reckless strike to sneak attack on demand" and then grew into so much more when I built them out. I am a big proponent of nailing down what you actually want to play mechanically and then using reflavoring and appropriate subclasses to evoke a theme.
Arcane Trickster rogue/School of Illusion wizard One of my favorite blends, and super flexible to boot. A primarily-Rogue that splashes a few levels of wizard frees up their limited AT spell picks for punchier stuff whilst gaining low-level utility magic, rituals, and a bevy of extra cantrips, making for a very cool erudite-assassin playstyle where physical prowess is augmented by a utility beltful of magical tricks. Lean the other way, primarily wizard with enough rogue levels to get to AT? You have a renegade occultist or a mystic assassin, a character that can use tricksy thieving skills to get in place to unleash magical Hell on their foes. I like to emphasize the mind-bending powers of illusion magic, but it's not actually a necessity.
Battle Master fighter/Ancestral Spirits barbarian This is my "Spartan Warrior" mix. Barbarian gives you that badass sword, shield, and oiled-pecs aesthetic, while the mix of a Fattlemaster's bevy of disciplined combat tactics and the barbarian's Rage brings out the controlled brutality of Spartan soldiers. The real kicker is Ancestral Guardians offering a spectral legion, the ghosts of fallen allies fighting at your side. yeah yeah, you could do Echo Knight, but really? Echo Knight is one really solid ghost, more of a Stand user than anything else. For me, the ephemeral, almost indistinct ancestors of the AG barbarian are a much better fit for something like the Last Soldier, a character who's survived countless battlefields and seen countless comrades...not. The legion answers the Last Soldier's call, it safeguards those it can, and it stands ready to welcome new soldiers into its ranks.
Those are the two that come to mind for me right off. Maybe something there to look into later?

When creating a PC I often think of what class options they would have while young, so if my background story was orphan who went to Strixhaven I might go rogue/wizard or some such. If I have an PC idea I look at the class and see what it is about and then work that into my PC, so urban underground ranger who caught a sickness and was cured by the Blood Hunters hemocraft formula, becomes ranger gloomstalker/Blood Hunter.
Also do not forget that tools proficiencies can provide some good background material for your PC even if you do not use them a lot in the game, so your PC is a BloodHunter sample collector having either a tool use in bisecting kit/butcher kit or medicine skill and healer kit in addition to your alchemy tool kit for collecting creature organ and blood samples for study and possible future formulas (Path of the Mutant) or for creation of future paths.
Also as always stats play a huge role in what I look at for multi-classing and my stats vs the rest of the group. So if I have great stats vs the group I have no problem dipping into 3 classes vs 2 to keep some game balance as well as fill more roles in the party.

Both of these have been brough up lots before, but I'll throw them in because they are good themes.
Divine soul sorcerer/celestial warlock. Whatever entity was part of your bloodline reached out to make a deal to give you other powers.
Tempest cleric/storm sorcerer and go all crazy with lightning.
Wild Magic sorcerer/Wild Magic barbarian, and have strange things happen almost any time you do anything. It would be both MAD and annoying.
If you want to be Realm Lord go Warlock: Hexblade and Paladin: Oath of Conquest won't take long

Love this idea
One multiclass I love is Bard (Whispers) with Rogue (Soulkniife) for all the Psychic damage with none of the effort of wasting a spell slot.
One idea for a good THEME, rather than power is to evenly split between two subclasses that dupe a similar ability.
That is, Eldritch Knight / Bladesinger. Fighter-Mage combined with Mage-Fighter.
Cleric of Death / Necromancer Wizard
etc. etc.
