I just want people opinions and what they think this would look like in battle thematically, for context, mage armor 18+bladesong to 23+ haste to 25+ shield for 30 AC, this is ridiculous for a wizard and i love it. For more theme, I am dual wielding scimitars and wear a wizards robe and just shred through people, like an anime.
Shield only lasts for 1 round, so you will burn slots very quickly. Bladesong can’t be used with 2 weapon fighting, it ends if you make an attack with your second hand. People will try to argue that the wording as written means it only applies to 2 handed weapons not two 1 handed weapons, but thats just because the writers did an appallingly bad job of writing the rules for 5e. If you are ‘churning’ through enemies then either your dm is not playing them intelligently or is grossly underestimating encounter balance. Likewise there are many many ways to bring you down in just a round or two even with that AC.
for an extra bump in that AC id maybe recommend multiclassing into college of swords bard (3 levels) and take defensive flourish, then maybe the martial adept feat and take bait and switch maneuvre
For bladesong it specifically says that the effect will end "if you use two hands to make a weapon attack" so you can dual wield but you can't have use a two handed weapon, also I know there's spells and such that don't effect ac but I just wanted a wizard guy with super high ac, because thematically its funny and fun.

So if you aer making an attack with a weapon in each hand you are by default making an attack with 2 hands. You can play all the word games you want, the meaning of that statement is very clear. If your dm let's you get away with those kinds of shenanigans then well done. Good for you. You won d&d.
Warcaster feat will be your friend. I can see the benefit of wielding the second weapon, especially if you dip fighter to grab the +1AC for dual wielding. Warcaster will also take care of the verbal + somatic part of casting a spell, and also help you maintain concentration on that haste spell so you aren't exhausted and stunned when you fail a concentration check - which will still happen.
If I am a DM I know I would target you with a few 'hold person' / 'dispel magic' type spells to show you how dangerous losing concentration on haste would be, in the middle of melee -- then all those lovely AC bonuses fall off and the damage shreds through your wizard hps. I love the character concept, and holding a reaction silvery barbs / shield / etc. will be a smart move.

This is a weird hill to die on, man. You acknowledge that your interpretation doesn't fit the wording and then say it's because the writers are incompetent. The wording is clear, you just don't like what it's saying. A weapon attack is a single attack with a weapon. You can only do that with two hands if you're wielding a two-handed weapon.
The wild thing is that you seem to think it's some minmaxer hack. A dual wielding bladesinger is not optimal, but it's a nice option to have for people that want that look. Maybe just calm down and let them have their fun.

Jeremy Crawford says "Nothing in Bladesong is incompatible with wielding two weapons" (Nov 4, 2015 Sage Advice)
On the other hand, Mike Mearls said the opposite, then backtracked when it was pointed out that he contradicted Jeremy Crawford. So even WotC isn't sure what the rule is
That is burning a lot of spell slots to maintain high AC. Just make sure you do it for a reason though, and not just spam it at the start of combat just because you can.
Yeah, the language says if you make an attack with 2 hands. If you make one attack with one hand, then make a second attack with the other hand, you are not make an/one/singular attack, you are making two attacks, each with one hand.
This is how I interpret this issue. Bladesong doesn't work with two-handed weapons at all and limits versatile to only using the weapon one handed.
The somatic component still will cause an issues wielding two weapons unless you have the War Caster feat.

thematically? ribbons on clothes, blades as ribbons, ribbons of blood arcing...
it might depend on your vision of how a bladesinger would look compared to a martial bard or eccentric fighter. what's the point of these guys being wizards if there's not something arcane in what they do? is it just modified cat's grace taken to extreme or is it an amalgam of learned skills, bone-deep enhancements, affixed powers, and master craft weapons (for the, you know, 'singing' blades)? i can't imagine a bladesinger without a sort of nimbus blur or hazy aura of accumulated grace that keeps their hair and light clothing flowing in a breeze even when they stand somewhat still. and i'd describe their movement as a mirage, the observer unable to tell if their swords snake around defenses or if that's only an illusion you're meant to see.
if that's too much then, i dunno, maybe wear a long-tailed cloak and spin around like the guy from SAO. i'm behind on my anime, but that sounds themey.

can add 1d8 & 1d6 to your AC

Isn't Shield Verbal and Somatic? Don't you need a free hand to cast it?
