I'm sure I had a reason to scale the bite damage but I'll be damned if I can remember why I did it, the Monster Gnoll bite damage only ranges from a d4 to a d6 so probably a d6 bite would do.
Possibly because it was shifted to a BA; since it doesn't scale with level any more (it no longer benefits from Extra Attack), you might have felt that it needed to have its own level scaling.
I don't know whether that's a good scaling or not (again, d10 is a mite powerful for a BA in my admittedly untrained eye, but I could be wrong). It did need adjusting, and I do approve of it being a BA; it makes sense that a bite can be performed independently of arm based attacks and it gives extra options for a lesser used part of the action economy. As it was, natural weapons are just too niche to be of much benefit.

I think it would be almost impossible to play a non-chaotic evil gnoll. but, PCs can always by chaotic evil, and I did say almost impossible. an example of how a non chaotic evil gnoll could be one whom a deity granted goodness.

It's not in an official book but DnD intends that you can play as anything you want. I'd use an orc legacy) as a base since they're similar size and weight and the STR/CON bonuses line up with the Gnoll NPC stat block and the racials are also well suited for a gnoll.
Since this thread has come back around I'll pop this on. I have had another idea for flavouring a Gnoll. In Planeshift: Amonkhet (a free dnd supplement released byt the magic the gathering team some time ago, link here: https://mtg.fandom.com/wiki/Plane_Shift) there is a race called the Khenra which are jackal headed people which could make for a suitable non-demonic origin of the gnoll with a little tweaking of lore. You can also take the minotaur and tweak it a little so their horn attack becomes a bite attack and the savage attack becomes a rampage-esque ability and that could also make for a decent non-demonic origin.
Can I ask why you would want to play something like a Gnoll (or goblin or kobold for that matter)? What is it that is drawn to you about such a creature?

I'm not really interested in going back through what is mostly a dead thread to see if it has been mentioned, but for those wanting to play Gnolls so badly, just play Lizardfolk and reskin as a hyena-person instead of a lizard-person. The bite attack that grants temp HP, along with the ability to craft weapons and armor from your fallen foes fits decently will with Gnoll aesthetics.

The point is that the "monster" species are, in this respect, no different from the "civilized" species. People want to play them because of a vast variety of reasons, which almost all come down to "sounds like fun". Maybe you only play humans or whatever because that sounds like fun for you.

Some people just like playing characters that aren't the typical PHB races.

Surprisingly, hyenas are much more closely related to cats than they are to dogs. Seals are more closely related to dogs than hyenas are. It is crazy.
