I don't think they usually add new subclasses in adventures but this would be a great place for the rune knight to get added
They have never added in subclasses to adventure books, so this is fairly unlikely. They don't add major player options to adventures books, as players typically shouldn't buy those books, DMs should.

Your feelings mirror my own feelings with almost every non-Forgotten Realms release. I really love 5e, and I think that the way they've developed the Forgotten Realms and finally developed it as the default setting has been entirely positive. A mix of game design and lore choices has forced players into the positions of heroes and villains, whereas in previous editions of the setting, the major players were always the epic mages and major political characters. Now, even though there's a handful of high level non-enemies you'll encounter in the official modules, the players always feel like the main characters and the true heroes of the setting.
Meanwhile, I've been very unimpressed with the new settings. Ravnica is a pretty lousy setting all together, and Theros seems a little underdeveloped, but the themes are neat at least.
In 25 years of playing D&D and endless efforts at homebrewing rules, and homebrewing settings (successful at both), I came to the determination that the game is designed with three key things in mind: Pulped Tolkien Fantasy, & Heroic Adventures. I've come around to having the opinion that if I don't want dwarves, elves, magical wizards, heroic knights, savage orcs, and scheming dragons, with heroic player characters that can fight any enemy or overcome any obstacle, then I shouldn't be playing D&D. The purpose of this point being, settings that get away from those two themes: Pulped Tolkien Fantasy, & Heroic Adventures, are inherently worse off for being played in D&D at all. Eberron for example, is a great setting and a lousy D&D setting, it's compulsion to adapt D&D into a setting that isn't D&D is the issue. Same applies for Ravnica and even some classical settings like Planescape and Ravenloft. Mind you, they can all work just fine in D&D, but they would be better off as games of their own, with systems that support their intended feeling better. Ravenloft in particular, would benefit from being played as a Basic Role-Playing system for its themes of gothic horror are only hurt by the invincible, capable PCs.
If they kill the frostmaiden, because I recall it saying that there is a stat block for her. Would there be no more cold? Would she regenerate like a Demon outside of their home plane?
Most likely she'll have something similar to Tiamat's Discorporation ability that means she doesn't die at 0 HP, she just loses her physical form and returns to her home in the Planes for a time. Or it will simply be an Avatar or Aspect of Aurill so that killing it doesn't hurt the real thing.

Icewind Dale is the far north of the Forgotten Realms, basically subarctic mountain forests. Its primary settlements is the Tentowns, which is just ten towns filled mostly with angry humans. Other key inhabitants of the Dales include angry dwarves in Mithral Hall, angry orcs, angry drow (from the Underdark), angry Frost Giants, angry trolls, angry winter wolves, and angry Rehmoraz.

There's a bunch of videos with Perkins talking about it. I'd certainly be willing to play it, I'm just not sure it's the adventure I'm looking for. And that's OK...
There are supposed to be a few new spells (and a lot of monsters) in there, so I am pretty excited about that. I really want to do a cold-based character and the spell choices are lacking.

You can make due with Thunder or Lightning, but that's more by virtue of there being few things that resist either, rather than the versatility of the spells dealing either Lightning or Thunder

Yeah, Lightning is probably the second most viable option, with Lightning Bolt, Shocking Grasp, Chain Lightning, and the others.

So, they have revealed it. What I like is that it is inspired by stories like John Carpenter's "The Thing", so it has that horror aspect...

Yeah, spell choices are lacking for any elemental type besides fire.

Even for fire, you have to choose to be either a tiefling or genasi, it seems. Fire is the best element, with fireball.
