So like many people I've been rewatching the Legend of Korra and really loved Amon as a villain and wanted to try and make him into an antagonist for my players. I wanted to get some ideas for abilities they could have to work with. Seems like Monk might be a good path to take him down with maybe fighter or bard given his charisma?
Most importantly though I wanted to try and figure out a key mechanic for bloodbending which, spoiler, is kinda his whole deal. How would you work to create bloodbending for 5e?
Blood Hunter really isn't remotely like the Blood Benders.
I would make it a Monk subclass. The different level features could use ki to cause different conditions or damage that could thematically be tied to the Blood Bending seen in the show.

Lightning Strike - A rebranded Fire Bolt for Wizards & Sorcerers.
Spirit Bomb - A holy fireball for Clerics, Paladins, & Divine Soul Sorcerers!
Sword Dancer - A Cleric subclass specifically for the Drow goddess Eilistraee.

A number of the Blood Curses would fit quite nicely, such as:
Blood Curse of Binding
As a bonus action, you can attempt to bind a creature you can see within 30 feet of you that is no more than one size larger than you. The target must succeed on a Strength saving throw or have their speed be reduced to 0 and they can’t use reactions until the end of your next turn.
If i remember correctly, blood bending make the bender able to control its opponent body thank to his blood ? With that, the first idea coming to my mind is to use the command spell and say you force the person to obey the command thanks to the use of blood bending. The good thing using this method is that, it's only a 1st level spell, so you can pick it up with a feat for example, and have it with any class.
As others have said, this is covered by spells that immobilize, paralyze, or dominate.
There's good reason that they gave this power to the BBEG rather than a protagonist of the show. Amon was wildly OP and you just couldn't translate that over to a PC in D&D. At-will paralyze/dominate is not something you can balance with other PC options.

thats nice and all but one or two features overlapping does not mean blood hunters are at all similar to bloodbenders
They don’t need to be. The question is how might one create a blood bender, not which entire class is identical to bloodbending
