Not sure what that clause is for, since I don't see how it would break anything. You need to be directly mounted on it for the spell share thing, so even my ridiculous mount pyramid wouldn't exploit that. Lame.

It might not even be an issue of breaking the game directly, but messing with action economy. Having an extra body on the field for the majority of encounters slows things, so having the inherent ability to do that at least twice can really start making things a slog.

maybe you should also get tenser's transformation on top of that, letting you buff both yourself and your glorious steed to great effect

Thats a fun spell. I also love the idea of my steed getting proficiency in martial weapons lol.
I wonder how polymorph plays with a steed? Since the steed shares the same effect as that which effects the target, would that technically get around the challenge rating cap?

the spells effect is not shared, just the spell itself, so you could polymorph yourself into one animal and your steed into another, or polymorph both into the same animal.
Also i have been brewing on a similar idea for a while and i will have to recommend you pick up true polymorph at 17th level as not only is it a really good and veratile spell on its own, you can also turn your steed (permanently) into a CR 2 centaur that can weild weapons for you whilst being ridable

I think you can get innate spellcasting though, while keeping the dragon's stats.

Honestly, the inclusion of the term "class feature" when referring to a NPC stat block is a little vague. I think it was confirmed that spellcasting was one thing it refers too.

in the shapechange spell, it is specified that the creature you turn into must be an "generic" version of that creature, so no variant features introduced in sidebars would be available (and of course no class features) the same does not seem to be the case for true polymorph tho, at least not explicitly, so you could theoretically cast it on a chair and turn it into an halfling necromancer from volo's guide or other schenanigans

Isn't it possible to have multiple steeds and a familiar from these spells, so long as each spell only corresponds to one familiar/steed?

It might not even be an issue of breaking the game directly, but messing with action economy. Having an extra body on the field for the majority of encounters slows things, so having the inherent ability to do that at least twice can really start making things a slog.
Then I recommend some of the summon spells from TCoE.
They do add some fun stuff. Seems like WotC decided to throw a bone to groups that don't take forever to get through combat encounters.
