I would do Fire Resistance for Fire Giants, Thunder for Cloud, Lightning for Storm, Poison for Hill, Cold for Frost, and Psychic for Stone (I'm not sure about this, but they are described as stoic and unaffected by attempts to manipulate them.)

Goliaths already seem to fit as Half Stone Giants though since they were recently updated to have Cold Resistance maybe not.
Goliaths in Exandria are descended from Stone Giants, but I don't think that's canon for other worlds. The cold resistance is a bit weird, as that is specific to living on the tops of mountains (which most stone giants don't do), but otherwise they work.

I'm guessing that at some point, there will be a Sorcerer UA where the older subclasses are given bonus spell lists. We've already got a thread on that topic in the Sorcerer subforum, but after Tasha's, I think it's safe to say Wizards agrees that it is needed.
They should, but I doubt they will. WotC already said (for both sorcerer and ranger) that bonus spells are particular to newer subclasses only, and older ones are staying the same. Plus, Beastmaster got a rework, and Cleric subclasses across the board got a variant to choose from in Tasha's; if they were going to do it, they were going to do it then. I'd love to be wrong, but...

After Tasha's I'd like to see another UA for Class Feature Variants, especially those less focused on introducing new mechanics/abilities but on reworking class/subclass features that the community does not seem fond of in its current format. Things like changes to Berserker Barbarian or the Way of the Four Element subclass (I'd be happy if they even just introduced an "expanded spell list" for elemental disciplines).

No, they planned on doing the spell lists for the new subclasses and on changing the Beast Master, so it would have almost definitely come to mind to add spell lists to the other sorcerer subclasses.

We already have so many subclasses. I think they really need to come up with something completely new.
