Are there general stat blocks for each class as an enemy? Same thing for races? Just a general enemy stat block so that I'm not making characters for a bunch of encounters
VGtM had some good ones, and there’s a few simple ones in the Monster Manual. MotM has a few depressingly stripped down versions of the VGtM stuff, but they’re only useful as trash mobs, not real NPC’s.
I've often found myself wanting something like this. Some kind of homebrew functionality of taking stripped down class feats and spell lists for modular enemies would be amazing. But I suppose trying to convert PC abilities into the CR system would pose a lot of problems. There might be some homebrews out there you can find that work.
I would not overthink this. Give a monster a version of Sneak Attack and Cunning Action, ensure it has a good DEX, and it is clearly identifiable as a rogue. Give it a good WIS, wildshape, and signature spells like entangle and call lightning and it is clearly a druid.
Enemies in 5e are not complex. They tend to generally have the same basic functionality with one or two features that distinguish them from other enemies. Adding two very recognizable features from a class is really all you need to make it clear in combat.

There are not. As The_Ace_of_Rogues pointed out, there are some examples for some stuff in some of the books, but they’re mostly legacy now. I have published a few things here on DDB, and am planning to publish more whenever I get around to it.
